1/2 C milk [I used skim]
1 C caster sugar
1/2 C mashed banana [about 2 large]
1 1/2 C SR flour
1/2 cup frozen blueberries
Place butter and milk in small pan, stir over low heat until butter melts.
Beat eggs with electric mixer until thick and creamy.
Gradually add sugar, beating until dissolved between additions.
Stir in banana.
Fold in sifted flour and cooled butter mixture in 2 batches.
Divide mixture among muffin tins/cases [1/3 cup capacity]
Bake in moderate oven 10 mins.
Remove from oven press blueberries into tops of cakes.
Bake in moderate oven about 15 minutes.
Turn onto rack to cook.
Note: I cheated and added the blueberries before baking:O)
The mini muffins took 20 minutes and the mini loaves took
about 30 minutes.
