90g butter
1 cup raw sugar
1 egg
1.5 cup plain flour
1 tsp bicarb soda
3/4 cup mashed banana (2 med over-ripe)
1 cup grated carrot, firmly packed
3/4 cup walnut or pecan pieces
Grease 14x21cm loaf pan, cover base with baking paper
Combine butter, sugar, egg, flour, soda and banana in bowl
Beat on low speed with electric mixer until ingredients combined
Beat on medium speed until mixture smooth and changed in colour
Stir in carrot and nuts
Spread mixture into prepared pan
Bake in moderate oven 1 1/4 hr (check after about an hr)
Stand a few minutes before turning onto rack to cool
