Recipe adapted from Panasonic Bread Machine book (1996)
2 tsp instant dry yeast
3.5 C bread flour (I use organic, unbleached)
4 tsp milk powder (skim ok)
3 tbs sugar
1 tsp salt
2 tsp cinnamon
2 tsp mixed spice
1 C mixed dried fruit (I use 1.5 C: raisins, mixed peel, apricot etc)
45g butter
450 ml milk (may need less, depends on your machine)
Make the dough according to your bread baker
(mine requires fruit to be added during rising stage)
knead dough on floured surface then divide into approx 15 balls
place on large tray and let sit in warm spot for about 45 mins
bake 180 deg C for about 25 mins
CROSSES: mix 1/2 C flour with 80ml water and pipe over buns
GLAZE: brush with warmed apricot jam as soon as they come out of oven
NOTE: I rarely bother with the crosses..only for Easter Sunday and often
make this as a fruit loaf in a large loaf tin..bake for about 38 mins
and it's delicious toasted!! ENJOY "D
