1 cup chickpeas
{approx. 400g can or packet - very well cooked}
1/2 cup water
1/3 cup tahini {ground sesame seed paste}
1/3 cup olive oil
juice of 1/2 lemon
2 cloves garlic
1 tsp salt
Put garlic, salt, chick peas & tahini in processor & blend together
Gradually add the water and lemon juice alternately with olive oil
Process until smooth
Taste test to see if more lemon, garlic or salt is needed
Stores in fridge for at least 2 weeks
I like to cover with a thin drizzle of olive oil
& a sprinkle of paprika just before serving
