Lemon & Raisin Pikelets

From: Weight Watchers Recipe Collection 2001

3/4 C SR flour
2 tbs caster sugar
1 tsp lemon rind, grated
40g raisins, chopped
1 egg
1/2 C skim milk

Sift flour and sugar in bowl (I never sift)
Stir in lemon rind and raisins
Make a well in centre and gradually stir in the combined egg and milk
Mix until smooth
Coat fry pan with cooking spray (or butter!)
Heat and drop tbs mixture onto hot surface
Cook until bubbles appear, turn and cook other side
