{Adapted from recipe in AWW Cakes & Slices Cookbook 1991}
155g butter
2 tsp grated lemon rind
2/3 C caster sugar
3 eggs [4 small ok]
1C SR flour
1/4 C milk
Lemon Icing
1 C icing sugar
1 tsp butter
1 tbs lemon juice
1 tsp lemon rind
Grease a deep 20cm round pan, line base with paper
Combine all ingredients in large bowl
Beat on low speed with electric mixer until combined
Increase speed to medium and beat for 3 mins
Spread into prepared pan
Bake in moderate oven about 45 mins
Spread cold cake with icing
Icing: melt butter in glass bowl in microwave
stir in icing sugar and lemon juice/rind
Add hot water to thin to desired consistency
Variations: swap lemon juice/rind for orange
Omit rind from icing and sprinkle wet icing with 1 tbs coconut :O)
