You can substitute the salmon for tuna or bacon and use onion instead of the leek
and omit the corn, add capsicum etc.
1 tbs olive oil
1 leek, sliced
1/2 cup corn
1 tin salmon (425g)
1 cup cheese
1/2 cup milk
1/2 cup cream
3 large or 4 small eggs
s&p to taste
Fresh herbs, finely chopped
Saute leek & garlic in oil, add corn, cook a few minutes. Whisk together milk, cream,
eggs and s&p.In a casserole/quiche dish: layer some cheese then salmon, leek
mixture, more cheese, salmon etc. Save a little cheese for the top. Pour egg
mixture over the top then sprinkle over the remaining cheese. Sprinkle with paprika.
Bake @ 180 deg for about 35 minutes.
